  • 1 cup white mushrooms, finely chopped (approximately 5 large mushrooms)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tbsp dried minced onion
  • 1 tsp bouillon powder (or bouillon paste)
  • 1 tsp salt
  • ½ teaspoon pepper

  • ¼ cup dried minced onion
  • 2 tbsp melted butter
  • 2 tbsp almond flour

How to Prepare Keto Green Bean Casserole

Instructions

  1. Prepare the homemade condensed cream of mushroom soup sauce by stirring together the ingredients. No sautéing or cooking is necessary for this creamy sauce.
  2. Thaw or steam your green beans.
  3. Combine the sauce and green beans in the casserole dish. Season the green bean mixture to taste with salt, pepper, or other preferred spices.
  4. Mix the topping ingredients and sprinkle them on top of the casserole. Bake in the oven at 350°F for approximately 25 minutes until it is hot, and the topping turns golden brown.

  1. Opt for frozen green beans – It saves time compared to steaming fresh ones.
  2. Freeze mushrooms – While mushrooms may not freeze well as a vegetable, they are easier to finely chop (without turning into mush) when frozen. Freeze white button mushrooms the day before and finely chop them in a food processor.
  3. Adjust long beans – If your green beans are exceptionally long, cut them into bite-sized pieces. For very thick beans, consider cutting them in half lengthwise.
  4. Make-ahead option – This dish is perfect for making ahead. Bake the green beans in the sauce without the topping, cool, and refrigerate. When ready to serve, add the topping and bake again until the green beans are hot.

Should I Opt for Fresh or Frozen Green Beans?

Both options are suitable for this keto recipe, but using frozen green beans is more convenient. If you choose fresh green beans, you’ll need to boil or steam and drain them first.

I used frozen green beans from Costco and thawed them in the microwave before continuing with the recipe. In the future, I’m considering cutting them in half as they were quite long.

Handling long green beans can be awkward when trying to eat without cutting them, especially during holiday gatherings where guests might be eating off paper plates while seated on my light-colored couch. To avoid inconvenience for my holiday guests, cutting them seems like a practical solution.
